Apple Fritters

1 cup flour
1 1/ 2 tsp. baking powder
1/ 2 tsp. salt
1 egg, beaten
2/3 cup milk
4 large cooking apples
2 T lemon juice
2 T confectioner's sugar plus more

Sift together flour, baking powder and salt. Combine egg and milk and add to sifted ingredients; beat smooth.

Peel, core, and chop apples into small pieces. Sprinkle with lemon juice and 2 Tbs. powdered sugar and lift to mix well. Add to beaten mixture and mix. Drop by spoonfuls into deep hot fat and cook, turning, until they're brown but not too dark. Drain well and sprinkle with extra powdered sugar.
