White Chip Caramel Bars

2 1/4 cups packed brown sugar
3/4 cup butter, melted
1 T vanilla
2 eggs, lightly beaten
2 cups all-purpose flour
1 1/2 tsp baking powder
1 cup chopped walnuts
1 cup white vanilla baking chips
1/2 cup white vanilla baking chips, melted
1. Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
2. In large bowl, mix brown sugar, butter, vanilla and eggs by hand with spoon until smooth (or can use electric mixer)
Stir in flour and baking powder until well blended. Stir in walnuts and 1 cup baking chips. Spread in pan.
3. Bake 25 to 30 minutes or until golden brown and center is set. Cool completely, about 1 hour. Drizzle with melted chips. Let stand until set, cut into bars.
Cindy's notes - this is just as good without the icing if you don't want it as sweet.
You can also use chocolate chips instead of white chips, or macadamia nuts instead of walnuts or any combo desired.
