TwixKat Bars
I think that these taste more like Twix bars than Kit Kat bars, hence the name
Source: Adapted from Paula Deen's Homemade Kit-Kat Bars on Serious Eats (my change is the chocolate coating)

Club Crackers - about 2 sleeves
1/2 pound (2 sticks) butter
2 cups graham cracker crumbs
1 cup firmly packed dark brown sugar
1/2 cup milk
1/3 cup granulated sugar
6 oz good quality chocolate - I use a combo of milk and dark

Line a 13-by-9-inch rectangular baking pan with crackers.
Melt butter in a large saucepan over medium heat. Stir in the graham cracker crumbs, dark brown sugar, milk and granulated sugar.
Bring to a gentle boil and boil for 5 minutes, stirring constantly so bottom doesn't burn. Remove from heat.
Pour half of the sugar mixture over the crackers and spread out with a flat or offset spatula.
Arrange another layer of crackers over the sugar layer in same pattern as first layer. Top with remaining sugar mixture. Top with a third layer of crackers.
Melt chocolate in microwave, stirring at 30 second intervals. When melted and smooth, spread over last layer of crackers.
Cool to room temperature, then cover and refrigerate two hours.
Cut into bars - I follow the outline of the crackers, then cut each cracker in half.
Bars will keep for two weeks, stored in an airtight container in the refrigerator.
