Strawberry Blueberry Crumb Bars
Source: combination of recipes

Crumble:
1 1/2 cups flour
1/2 cup sugar
1/2 tsp baking powder
1/8 tsp salt
1 large egg yolk
1 tsp vanilla extract
1/2 cup (1 stick) butter, cold and cut into pieces

Fruit Filling:
1/4 cup sugar
2 tsp cornstarch
1 1/2 cups chopped strawberries
1 cup blueberries
1 T fresh lemon juice

Topping
1/4 cup white baking chips

Preheat oven to 375. Line a 9x9 inch baking pan with parchment, adding a few inches on 2 opposite sides for easy removal.
Whisk together flour, sugar, baking powder and salt. In separate bowl, whisk together the egg yolk and vanilla. Stir egg mixture into flour mixture.
Cut in butter until mixture resembles coarse crumbs.
Press about 2/3 of mixture into the bottom of prepared baking dish.
Combine sugar and cornstarch in small bowl. In separate bowl, toss strawberries and blueberries with lemon juice.
Stir cornstarch mixture and berries together until berries are coated, spread over crust. Top with remaining crumb mixture.
Bake at 375 for 35-40 minutes, or until top is golden brown. Allow to cool.
Melt white baking chips, pipe over top of bars, cool.
Cut into bars.
