Peanut Butter Criss Cross Cookies

1 1/2 cups flour
1/2 tsp baking soda
dash salt
1/2 cup butter, softened
1 cup chunky peanut butter
1/2 cup packed brown sugar
1/2 cup granualted sugar
1 egg
1 tsp vanilla

Mix flour, soda and salt, set aside.
Beat butter and peanut butter until creamy. Add sugars, beat until smooth. Beat in egg and vanilla.
Stir in flour.
Roll heaping teasoonfuls into balls. Place 1 1/2 inches apart on ungreased cookie sheets. Flatten with tines of fork, making crisscross design.
Bake at 375 for 10-12 minutes until lightly browned. Cool on cookie sheet 1 minute before removing to paper towels to cool completely. Store tightly covered. Makes 60 cookies.
