Peanut Butter Cookies with Chips

1 cup butter, at room temp
1/2 cup sugar
1 1/4 cups brown sugar, packed
3 large eggs
1 cup smooth peanut butter
1 T vanilla
3 cups flour
1 tsp baking soda
1 tsp salt
1 (12 oz) bag chocolate or vanilla chips
1 cup salted cocktail peanuts

Beat butter and sugars until creamy.
Beat in eggs one at a time.
Add peanut butter and vanilla.
Fold in flour, baking soda and salt.
Stir in chocolate chips and nuts.
Roll into large walnut size balls, flatten slightly and place 2 inches apart on ungreased baking sheet.
Bake at 375 for about 12 minutes.
Store in airtight container at room temperature or in freezer for longer storage. Makes 4 dozen cookies.
