Peanut Butter Swirl Brownies
Source: adapted from Bob's Red Mill

Brownie layer:
1 stick (1/2 cup) butter
3 T cocoa powder
1 cup semi-sweet chocolate chips
1-1/4 cups sugar
3 eggs
1 tsp vanilla
1 cup flour
1/2 tsp salt

Peanut butter swirl:
3 T butter melted
1/2 cup peanut butter
1/3 cup 10x sugar
1/4 tsp salt
1/2 tsp vanilla

Heat oven to 350 F. Line an 8x8-inch baking pan with foil, leaving edges to hang over side of pan. Spray with cooking spray.
Melt the butter, cocoa and chocolate together in a heavy saucepan over low heat, stirring constantly with a wooden spoon.
Remove from heat and stir in sugar. Allow to cool slightly.
Stir in the eggs one at a time, add vanilla and mix until smooth. Stir in the flour and salt.
For peanut butter swirl, combine melted butter, peanut butter, powdered sugar, salt and vanilla in a bowl and stir until smooth.
Spread chocolate batter into prepared pan. Drop dollops of peanut butter mixture on top of brownie batter. Use a knife to swirl in the peanut butter.
Bake until a toothpick inserted comes out mostly clean, about 35 - 45 minutes. Cool on a wire rack for 1 hour.
Pull from pan using parchment paper liner, cut into squares.
