Lemon Tea Cookies
Source: Pillsbury Cookies, Cakes, Bars

Dough:
1 2/3 cups flour
1/3 cup 10x sugar
1 cup butter, softened
1 tsp vanilla

Filling: 1 egg, beaten
2/3 cup sugar
2 - 3 tsp grated lemon peel
1 tsp cornstarch
1/4 tsp salt
3 T lemon juice
1 T butter
Powdered sugar or coconut

Combine dough ingredients, blend well. Cover with plastic wrap, refrigerate 30 minutes. Shape dough into 1 inch balls. Place 2 inches apart on ungreased cookie sheets. Make imprint with thumb in center of each cookie.
Bake 350 for 8-10 minutes. Remove immediately from cookie sheets, cool completely. Combine filling ingredients in med saucepan . Cook over low heat until smooth and thickened, stirring constantly. Cool filling slightly. Spoon 1/4 tsp filling into center of each cookie, sprinkle with 10x sugar or coconut. 3 dozen
