Lemon Brownies

3/4 cup flour
3/4 cup sugar
1/2 tsp salt
1/2 cup (1 stick) butter, very softened
2 eggs
2 T fresh lemon juice

For glaze:
1/2 cup 10x sugar
1 T fresh lemon juice
Opt:lemon zest for garnish

Line an 8X8 inch baking dish with aluminum foil, leaving some overhang. Spray with nonstick cooking spray and set aside.
In a mixing bowl, stir together flour, sugar and salt.
Add butter and mix until crumbly.
In separate bowl, mix together eggs and 2T lemon juice. Stir into flour mixture, do not overbeat.
Pour into prepared pan.
Bake at 350 for 20-25 minutes or until starting to brown around the edges and center is set, do not overbake. Cool.
Mix glaze ingredients and spread over brownies. Sprinkle with lemon zest if desired.
After glaze has set for about on hour, lift out of pan with sides of aluminum foil and cut into bars.
Makes 16 large bars or 36 small bites.
