Lemon Bars
2 cups flour
1/2 cup 10x sugar
1 cup (2 sticks) butter
Sift together flour and sugar, cut in butter. Press into 13x9x2 pan.
Bake 350 20-25 minutes
4 eggs
2 cups granulated sugar
1/3 cup lemon juice
1/4 cup flour
1/2 tsp baking powder
dash salt
Opt: 1 cup coconut, sprinkle on top of lemon layer
Whisk together 1 cup of sugar, flour, baking powder and salt until no lumps remain. Beat together eggs and remaining sugar, add lemon juice. Stir flour/sugar mix into egg mixture. Pour over baked crust and bake 25 minutes longer. Cool, sprinkle with 10x sugar, cut into squares.
