Chocolate Cherry Kris Kringles

1/2 cup butter
1/2 cup brown sugar
1 teaspoon vanilla extract
2 T juice from cherries (more if needed)
1 1/2 cups all-purpose flour
1/8 teaspoon salt
20 to 25 maraschino cherries, patted dry
20 to 25 chocolate chips, plus 1 cup chocolate chips

Preheat oven to 350 degrees F.
Cream butter and sugar. Add vanilla, juice from cherries, flour and salt. Mix well.
Stuff each cherry with a chocolate chip, then wrap in 1 teaspoon dough.
Bake on ungreased cookie sheet for 12 to 15 minutes. Cool.
Melt 1 cup chocolate chips in microwave, and dip top of cookies into melted chocolate. (note - can melt chocolate chips in plastic bag, snip off corner and drizzle chocolate over cookies)
Makes 20-25 cookies.
