Carrot Cake Oatmeal Cookies
Source: combination of recipes

1 cup (2 sticks) unsalted butter, softened
1 cup brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
2 cups oats
2 cups finely shredded carrots
1 1/2 cups (8 oz) white chocolate chips
opt: raisins, chopped nuts

Cream together butter and sugars. Beat in eggs one at a time, mix in vanilla.
Combine flour, baking soda, cinnamon, and salt in separate bowl. Mix together with a wire whisk. Mix into creamed mixture.
Stir in oats, carrots, white chocolate chips and optional raisins and/or nuts.
Drop by spoonfuls on a parchment lined cookie sheet.
Bake at 350 for 10-12 minutes, cool for 2 minutes before removing to rack or paper towels to cool completely.
Makes about 5 dozen
