Brown Sugar Blondies (updated 7/27/20)

1 cup (2 sticks) unsalted butter, melted and cooled
1 2/3 cups brown sugar
2 eggs
2 tsp vanilla
1/2 tsp salt
2 cups plus 2 T all-purpose flour
1 T cornstarch
opt: 1 1/2 cups stir-ins: nuts, white or chocolate chips, dried fruit

Preheat oven to 350. Line a 9x13 inch pan with aluminum foil and lightly grease or spray with cooking spray.
In a large bowl, whisk together the melted butter and sugar (or beat with an electric mixer.
Whisk in the eggs and vanilla extract.
Stir in the flour, cornstarch and salt, ensuring that there are no flour clumps.
Fold in the optional mix-ins.
Spoon the batter into the prepared pan and smooth the top.
Bake in the preheated oven for 24-28 minutes, or until the top looks set and shiny and an inserted toothpick comes out clean or with a few damp crumbs.*
Cool fully before slicing into bars.
