Almond Maple Buckwheat Cookies

1/2 cup almond butter
1/2 cup maple syrup
2 T coconut oil, warmed if not liquid
1 egg
1 tsp vanilla
1/2 cup almond flour
1/2 cup buckwheat flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup chopped almonds, toasted
opt: 1/2 cup chocolate chips

Combine almond butter, maple syrup, coconut oil, egg and vanilla. Mix until smooth.
In separate bowl, combine flours, baking soda and salt. Stir in to wet ingredients with nuts and optional add-ins. Let batter sit for 5 minutes.
Spoon by tablespoonfuls onto parchment lined baking sheet.
Bake at 350 for 8-10 minutes, or just until edges start to brown.
Makes about 2 1/2 dozen
