Almond Cookies (updated 10/18/23)

1 cup unsalted butter, softened
1 cup sugar
1 egg
1 tsp almond extract
1 tsp baking powder
1/2 tsp kosher salt
3 cups flour
1 egg white beaten with 1 T water
thinly sliced almonds
Cream together butter and sugar. Beat in whole egg, almond extract, baking powder and salt.
Slowly add flour, stir into creamed mixture until combined.
Form dough into 1 inch balls, flatten slightly and place on parchment lined sheet. Brush with egg wash and press a few sliced almonds onto tops of cookies.
Bake at 325 for 13-15 minutes, just until edges start to brown.
Makes 4 dozen.
