Almond Butter Chocolate Cups
Source: combination of recipes

1/4 cup organic almond butter
1 T maple syrup
2 T almond flour
1/4 tsp salt

7 oz milk or dark chocolate (I like a combo of 5 oz milk and 2 oz dark, I use Trader Joe's pound plus)

Combine almond butter, maple syrup, almond flour and salt, stir until smooth and knead until easily handled. Divide into 16 equal portions, roll into balls and flatten into discs.
Melt chocolate in microwave - stirring after 30 second increments just until melted and smooth.
Drop almond discs one at a time into chocolate, spoon out and place in silicone muffin baking cups. Or spoon chocolate into muffin cups first and press discs into chocolate. Refrigerate until firm.
