Turkey Croquettes
adapted from Cooking Light

olive oil
1/2 cup chopped onion
1/4 cup chopped celery
1 clove garlic, minced
1 pound ground turkey
1 3/4 cups panko, divided
2 T milk
1 tsp chopped fresh sage
1/2 tsp salt
fresh ground pepper
1 egg

Saute onion and celery in small amount of oil until soft, add garlic for 30 seconds more. Combine with turkey, 1/4 cup panko, milk, sage, salt and pepper and eggs.
Cover and refrigerate 30 minutes.
Shape into 12 patties, coat with remaining panko.
Cook in small amount of oil, adding more as needed until browned on both sides and turkey is done.
