SESAME CHICKEN (serves 4)

5 chicken breast halves, boned, skinned & cut into bite-size pieces
1/4 cup flour
Salt & pepper
1/2 cup oil
1/4 cup sugar
1/4 cup soy sauce, preferably Japanese style
2 TBL sesame seeds
1/4 cup chopped green onions

Dredge the chicken pieces in flour seasoned w/salt & pepper. In a large frying pan heat the oil & cook the chicken chunks 3-4 minutes or until done (do not overcook.) Work in batches if necessary to avoid crowding the pan. Drain the chicken on paper towels & set aside, covered to keep warm.
Combine the sugar & soy sauce in a saucepan & heat until the sugar dissolves. Add the chicken chunks. Toss the chicken in the sauce with the sesame seeds & green onions. Serve at once.~~
