Lacquered Chicken Wings

12 large whole chicken wings
1/2 cup soy sauce
1/2 cup brown sugar, firmly packed
fresh ground black pepper

opt: cayenne pepper to taste
opt: rice wine vinegar, sesame seeds

Cut off the wing tips with a sharp heavy knife and discard. Cut wings into two pieces separating them at the joint, place in shallow roasting pan.
Combine the soy sauce and sugar with a liberal grinding of black pepper (and optional cayenne) and pour the mixture over the chicken, coating it well. Let marinate 30 minutes.
Bake wings at 375 for 40 minutes, turning every 10 minutes and stirring into sauce so that it doesn't burn on pan.
Makes 24 pieces.

Note: If desired sprinkle cooked wings with rice vinegar before serving, or scatter toasted sesame seeds on top.
