Easy Stir-Fry
Source: combination of recipes

Choice of: 1 cup broccoli pieces/florets, snow peas or snap peas
1 carrot, sliced on the diagonal
1/2 small red pepper, sliced
1 small onion, sliced
2 T oil
1 T sugar
1/2 tsp fresh ginger, minced
1 clove garlic, minced
2 T soy sauce
1 T white vinegar
1 tsp cornstarch
3 T water
opt: dash sesame oil
opt: dash Srirachi sauce
1 cup thinly sliced leftover chicken or pork

Heat the oil in a saucepan, add the veggies and fry for 2-3 minutes.
Add the sugar, ginger and garlic, cover the pan and cook slowly for 4-5 minutes.
Mix the soy sauce, vinegar, and cornstarch with 3 tablespoons water. Stir this in to the saucepan, cover again and cook for a further 3-4 minutes until sauce is thickened.
Add optional sesame oil and/or sriracha sauce
Add the meat and cook until warmed through.
