Cornflake Chicken (healthy "fried" chicken)

1 1/2 lbs skinless, boneless chicken breasts, or 2 lbs bone-in chicken pieces, skin removed
1/2 cup buttermilk, more or less as needed
1 cup cornflake crumbs (about 3 cups flakes before crushing)
1/2 tsp salt
1/4 - 1/2 tsp black pepper, to taste
1/4 - 1/2 tsp poultry seasoning, to taste

Soak chicken in buttermilk for an hour.
Combine cornflake crumbs and seasonings in plastic bag.
Remove chicken from buttermilk, let drain briefly, dredge in crumbs. Let sit 15 minutes for crumbs to set and adhere.
Place in baking pan that has been sprayed with nonstick spray, spray top of chicken.
For boneless chicken: Bake at 400 for 16 to 18 minutes, until chicken is done and crumb coating is crusty.
For bone-in chicken: Bake at 375 for 55-60 minutes, until chicken is done and crumbs are crispy.
