Chicken Thighs With Tomato Spinach Sauce

1 Tbsp butter
6 boneless, skinless chicken thighs
1/2 tsp salt
1/4 tsp ground black pepper
1 cup tomato sauce
2 garlic cloves
1/2 tsp dried basil
1/2 cup heavy cream
4 cups loosely packed fresh baby spinach leaves
1/2 cup finely grated cheese - combination of mozzarella and fresh parmesan

Heat butter in a large frying pan or skillet over medium high heat. Season chicken thighs with salt and pepper and add them to melted butter to sear for 7-10 minutes on each side, or until cooked through. Remove from saucepan and reserve on a plate.
Add tomato sauce, heavy cream, minced garlic, and dried basil to drippings in saucepan. Bring to a boil, stirring frequently. Simmer for several minutes on low heat. Add in fresh spinach. Stir until spinach wilts. Add cooked chicken back to saucepan. Sprinkle mozzarella cheese on each piece of chicken. Serve once cheese has melted.
Serve with pasta or healthier spaghetti squash or zucchini noodles
Yield: 3-4 servings
