Chicken Souvlaki

Souvlaki:
4 boneless chicken breasts, 1" pieces
1 tsp oregano
2 T olive oil
1 tsp salt
4 garlic cloves, minced
1/3 cup lemon juice
Opt: 2 med zucchinis, 1/2" slices

Marinate chicken in oregano, olive oil, salt, garlic and lemon juice (if marinating more than 1 hour, do not add lemon juice until last hour). Discard marinade, thread chicken (and zucchini) onto skewers. Grill over hot coals turning often until done, about 8 minutes.

Serve as dinner or on pita bread with Tzatziki sauce. Serve with Greek salad (tomato, cucumber, red onion, feta cheese, garbanzo beans).
