Chicken Parmesan

4 small boneless, skinless chicken breasts (or 2 large, sliced in half)
3/4 cup flour, seasoned with 1 tsp salt and 1/4 tsp pepper
1 egg, beaten with 2 T water
1 cup seasoned breadcrumbs or panko mixed with 1/4 cup fresh grated parmesan cheese
1/4 cup olive oil

Marinara Sauce
Freshly grated mozzarella and parmesan cheese

Pound breasts to 1/2-inch thickness. Dredge each breast in flour/salt, then egg, then breadcrumbs. Saute the chicken breasts in oil over med-high heat and brown on both sides, about 3 minutes per side. Spray a 13x9 baking pan. Add chicken, top with marinara sauce and grated cheese.
Bake at 375 for 15-20 minutes or until chicken is done and cheese is browned.
