Chicken Chow Mein (updated 7/25/21)

oil for sauteing
2 stalks celery, sliced across grain
8 mushrooms, sliced
1 onion, halved and sliced vertically
1 can water chestnuts, sliced - drained and rinsed
1 can bean sprouts - drained and rinsed
1 can bamboo shoots, drained and rinsed
2 cups cooked chicken

Sauce:
1 1/2 cups chicken broth
2 T soy sauce
1 T cornstarch

dry chow mein noodles

Saute celery over medium heat for 2 minutes, add onion and and stir fry 2 more minutes. Add remaining vegetables and cook until hot.
Push vegetables to sides of wok. Whisk sauce ingredients together and add to center of pan, stirring until thick and bubbly.
Add chicken, stir all together and cook until heated through. Serve with chow mein noodles. (or cooked noodles or rice)
