Baked Mustard Tarragon Chicken updated 3/24/24

1 pound boneless skinless chicken breasts (if bigger than 1/4 pound each, cut into smaller pieces)
1 T butter
1/2 tsp dried tarragon
1 tsp balsamic vinegar
1 T Dijon mustard
salt and pepper

Preheat oven to 400.
Trim chicken of any visible fat, pat dry.
Melt butter, and stir in remaining ingredients. Dip chicken pieces in mixture, and place in a baking dish.
Bake at 400 for 15 to 20 minutes, or until chicken pieces run clear when pricked with a toothpick.
Serves 4
