Asian Lettuce Wraps
Source: combination of recipes

Sauce:
1/4 cup soy sauce
2 T white vinegar
1 T Sriracha sauce (or to taste)
1 T sugar
1 tsp sesame oil
1 tsp fresh ginger, peeled and minced
1 clove garlic, minced

1 tablespoon vegetable oil
1 pound ground meat - turkey, pork, chicken (or leftover cooked meat, diced)
1 carrot, matchstick pieces
1/2 red pepper, small strips

Add ins: peanuts, sliced almonds or sunflower seeds
Top with jalapeno slices, scallion slices

1 large head Boston lettuce, leaves separated, washed and dried

Combine sauce ingredients in small saucepan, simmer until slightly reduced.
Brown ground meat, carrots and red peppers in oil, until meat is almost cooked through, 5 minutes.
Add half of sauce and cook until meat is done.
Stir in choice of nuts or sunflower seeds, top with jalapenos and/or scallions.
Serve in lettuce leaves with remaining sauce.
