1 stick (1/2 cup) unsalted butter, softened
3/4 cup sugar
2 eggs
1 tsp vanilla (or 1/2 tsp almond extract, depending on fruit)
1 cup flour
1 tsp baking powder
1/4 tsp salt
Sliced fruit, berries
Sugar and optional cinnamon or nutmeg, depending on fruit
Cream butter and sugar together until fluffy.
Beat in eggs, one at a time, stir in vanilla.
Whisk together flour, baking powder and salt, stir into creamed mixture.
Spread batter in greased 9" tart pan.
Top with choice of fruit. Sprinkle with sugar and optional cinnamon or nutmeg.
Bake at 350 for 50-60 minutes or until golden.
