Microwave Mug Cakes
Use a large coffee mug
Cooking times may vary, it depends on your microwave

Vanilla

1 T butter
3 T milk
1/2 teaspoon pure vanilla extract
1/4 teaspoon baking powder
Pinch of salt
4 1/2 tablespoons flour
2 T sugar

Melt butter in large microwave safe mug. Stir in milk, vanilla and baking powder. Stir in remaining ingredients.
Cook for 45 seconds at full power (in a 1500 watt oven).  Cook time will vary depending on how powerful your microwave is.


Chocolate

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
opt: 3 tablespoons chocolate chips
1/2 teaspoon vanilla

Add dry ingredients to mug and mix well.
Add egg and mix well.
Pour in milk, oil, and mix well.
Add chocolate chips and vanilla and mix again.
Put mug in microwave for 3 minutes on 1000 watts.
The cake will rise over the top of mug, dont be alarmed.
Allow to cool a bit and grab a spoon.


Healthy Chocolate

1 egg
1/4 cup almond flour
2 tablespoons raw cacao powder
2 tablespoons maple syrup, adjust to taste
1 teaspoon ghee
Optional additions: chocolate chips, vanilla, cardamom, cinnamon, etc.

Add the egg to a microwave safe mug and whisk.
Next, add the remaining ingredients and mix until well combined.
Microwave for 1-2 minutes, or until the cake is done.


Lemon

4 T all purpose flour
1/4 tsp baking powder
2 1/2 T granulated sugar
3 T milk
1 T vegetable oil
1 T fresh squeezed lemon juice
lemon zest

Using a small whisk, mix together flour, baking powder, sugar, milk, oil and lemon juice in a microwave safe mug until batter is smooth.
Grate some fresh lemon zest on top of batter and whisk into batter.
Cook in microwave for about 1 minute. Top of cake should be dry.
Let cool before eating. Add a lemon glaze if desired.
