Microwave Mug Cakes
Use a large coffee mug
Cooking times may vary, it depends on your microwave

1 T butter
3 T milk
1/2 teaspoon pure vanilla extract
1/4 teaspoon baking powder
Pinch of salt
4 1/2 tablespoons flour
2 T sugar
Melt butter in large microwave safe mug. Stir in milk, vanilla and baking powder. Stir in remaining ingredients.
Cook for 45 seconds at full power (in a 1500 watt oven). Cook time will vary depending on how powerful your microwave is.

3 T flour
1 T unsweetened cocoa powder
1/4 tsp baking powder
2 T sugar
dash salt
3 tablespoons milk
1 T oil or melted butter
1/8 tsp vanilla extract
1 tsp chocolate chips, or your favorite flavor baking chips
Spray the bottom of a microwave-safe mug or coffee cup lightly with cooking spray.
Add flour, sugar, cocoa powder, baking powder, and salt and stir together.
Stir in milk, oil or butter, and vanilla until smooth, being sure to scrape the bottom of the mug. Stir in chocolate chips or sprinkle them on top.
Cook in microwave for 70-90 seconds until cake is just set, but still barely shiny on top. Allow to rest in microwave for 1 minute.
Notes - Because all microwaves are different, it's difficult to give a precise cook time. Start with 70 seconds, wait 1 minute while it cools, then look to see if it is set. Add an additional 15-25 seconds if needed. Allow it to rest in the microwave for 1 minute. The trick with mug cakes is to stop cooking the cake earlier than you think, because you want it to be soft on the inside, and the cake will also continue to cook as it cools.
Healthy Chocolate

1 egg
1/4 cup almond flour
2 tablespoons raw cacao powder
2 tablespoons maple syrup, adjust to taste
1 teaspoon ghee
Optional additions: chocolate chips, vanilla, cardamom, cinnamon, etc.
Add the egg to a microwave safe mug and whisk.
Next, add the remaining ingredients and mix until well combined.
Microwave for 1-2 minutes, or until the cake is done.
Lemon

4 T all purpose flour
1/4 tsp baking powder
2 1/2 T granulated sugar
3 T milk
1 T vegetable oil
1 T fresh squeezed lemon juice
lemon zest
Using a small whisk, mix together flour, baking powder, sugar, milk, oil and lemon juice in a microwave safe mug until batter is smooth.
Grate some fresh lemon zest on top of batter and whisk into batter.
Cook in microwave for about 1 minute. Top of cake should be dry.
Let cool before eating. Add a lemon glaze if desired.
