Hot Milk Cake

Old fashioned, simple, melts in your mouth!
Pictures: Brown Sugar Frosting .... Strawberries and Cream

4 eggs
2 cups sugar
2 1/4 cups flour
2 1/4 tsp baking powder
1/4 tsp salt
1 tsp vanilla
1 1/4 cups milk
1/2 cup (1 stick) butter

Beat eggs and sugar well.
Combine flour with baking powder and salt and add to egg mixture along with vanilla.
Heat milk and butter together until butter melts; gradually add to batter, beating until well blended.
Pour batter into a greased 9x13 pan. Bake at 350 for 30 to 35 minutes.
Cool and frost as desired (below)

Brown Sugar Frosting
Chocolate Ganache
Strawberries and Cream
Cinnamon Topping - While cake is still warm, spread with 2 T butter, sprinkle sugar/cinnamon mixture over the top (1/2 cup sugar and 2 T cinnamon)
Tips:
Cube leftovers to layer into a trifle with berries and cream.
Swap 1/2 tsp almond extract for the vanilla, and serve with whipped cream and toasted almonds.


Hot Milk Cupcakes

1 cup sugar
1 cup flour
1/8 tsp salt
1 tsp baking powder
1/2 cup hot milk
4 T butter
2 eggs
1 tsp vanilla

Whisk together dry ingredients.
Melt butter in milk. Add to the dry ingredients. Mix egg and vanilla, add to batter.
Bake at 375 for 20 minutes. Makes 1 dozen cupcakes.
