German Apple Coffeecake
1 stick butter, softened
1/2 cup sugar
1 egg
1 T rum
grated rind of 1/2 lemon
1 cup flour
1/2 tsp baking powder
dash salt
2-4 apples* depending on size, peeled, cored, sliced
cinnamon sugar
10x sugar
Cream butter and sugar together, beat in egg, add flavorings.
Whisk together flour, baking powder and salt together, combine with creamed mixture.
Spread in 9 inch round cake pan that has been buttered and floured. Shape with a slight edge around outside.
Top with sliced fresh fruit. Sprinkle with sugar and cinnamon.
Bake at 350 for 35 minutes. Serve warm or cold, top with sifted 10x sugar.
* can use peaches, apples, plums, nectarines, apricots
