Banana Nut Cake
Source: Mom - from 1950 Betty Crocker Cookbook
Cindy's note - my inclination would be to sub butter for the shortening and add vanilla. But this is a recipe not to be messed with - everyone loves it exactly as it is.
1/2 cup shortening
1 1/2 cups sugar
2 eggs
1 cup mashed banana (2-3 bananas)
1/4 cup buttermilk
2 cups flour
1/4 tsp baking powder
3/4 tsp baking soda
1 teaspoon salt
1/2 cup nuts, finely chopped
Cream together the shortening and sugar.
Beat in eggs, one at a time.
Beat in banana.
Whisk together dry ingredients, add alternately to creamed mixture with buttermilk.
Stir in nuts.
Pour into 2 greased and floured 9" cake pans for layer cake, or a 13x9 pan.
Bake at 350 for 25-30 minutes (round cake pans) or 35-40 minutes (13x9 pan)
Cool and frost.
Frost with Vanilla Buttercream Icing
