Easy Apple Cake

3 cups diced apples (once I used 4 cups by mistake and it was still really good)
2 tablespoons butter
1/2 cup sugar
1 egg
1 teaspoon vanilla
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup chopped walnuts
Cindy's notes - I sometimes add a little fresh grated nutmeg and/or a handful of raisins

Cream sugar and butter; add egg, cinnamon, vanilla, nuts. Fold in apples and the rest of ingredients. Batter will be stiff.
Pour into a greased and floured 8x8-inch pan.
Bake at 350° F for 40-45 minutes.
