Yeast Raised doughnuts

2 1/4 tsp Active dry yeast
3/4 cup Whole Milk
3 cup + 2 Tbsp AP Flour
6 ea. Egg yolks
1/2 cup Sugar
3/4 tsp Salt
1 stick Butter
1 Tbsp Vanilla Extract

Directions

1. Place yeast in bowl of kitchen aid mixer.
Heat the milk until slightly warm to the touch.
Pour warm milk over the yeast and stir until dissolved.
Add 2 3/4 c. of flour into milk+yeast mixture, DO NOT STIR
Wrap the bowl and place in warm area for 30 min.

2. In a separate bowl, whisk together egg yolks, sugar, and salt.
Whisk in the rest of the flour and set aside

3. Melt butter in microwave and add to the egg mixture.
Combine the egg mixture and vanilla to the bowl of the flour, milk and yeast.
Mix on low for 1 min. with paddle attachment then turn up to medium and mix for another minute.

4. The dough will be sticky and very soft.
Remove down from bowl onto floured surface and knead into a ball.
Place dough ball into lightly oiled bowl and roll the ball around to make sure the oil is covered the ball.
Wrap bowl with plastic wrap and let double in size for 1 1/2 to 2 hours depending on the temperature.
Deflate the dough and let rise for another 30 minutes

5. Turn dough out onto lightly floured surface and roll out until 1/2 inch thick
Use your favorite doughnut cutter and cut into whatever shape you want.
Gently drop the doughnuts into 375 degrees oil and fry until golden brown.
Toss into cinnamon sugar or glaze with your favorite glaze.
