Whole Wheat Oatmeal Orange Muffins
1/2 cup rolled oats
1/2 cup orange juice
1 large egg, lightly beaten
1/4 cup butter, melted
1/4 cup unsweetened applesauce
1/2 tsp fresh grated orange zest
1/4 cup sugar
1/4 cup brown sugar
1 cup all purpose flour
1/2 cup whole wheat flour
1 1/4 tsp baking powder
1/4 tsp baking soda
1/4 teaspoon salt
opt: dried cranberries, nuts
Combine oats and orange juice in large bowl, let sit for 5 minutes.
Beat in egg, butter, applesauce, zest and sugars with a wooden spoon or a hand mixer.
In another bowl, sift together flour, baking powder, baking soda, and salt; add to oat mixture and stir to blend.
Spoon into 12 muffin cups or 24 mini muffin cups (I use an ice cream scoop)
Bake at 400 for 18 to 22 minutes (12-14 minutes for mini) or until muffins are lightly browned on top.
Makes 12 muffins or 24 mini muffins.
