Flour Tortillas

2 cups flour (can sub whole wheat or flour of choice for part of white)
1/2 tsp salt
1 tsp baking powder
1/4 cup shortening or oil
1/2 - 3/4 cup warm water - more or less as needed

In a bowl, blend flour, salt, and baking powder.
Stir in oil or cut in shortening
Slowly add warm water until dough is soft and stays together. Water amount will vary with different flour types.
Knead on a floured surface until dough is smooth and elastic. Divide into 8 balls.
Cover loosely with plastic wrap and let stand at least 30 minutes.

Roll out dough balls into thin 6-8 inch circles on floured surface.
Place on a pre-heated non-stick pan or cast iron skillet and cook until just browned on each side.
Makes 8 tortillas
