Oatmeal Sandwich Bread
Source: combination of recipes
1 cup rolled oats
1 3/4 cups boiling water
2 T butter
1 T maple syrup, honey or sugar
2 cups flour, more or less as needed
1 1/2 teaspoons salt
2 tsp instant yeast
In a large bowl, combine oats, boiling water, butter and sweetener; let sit for 30 minutes
Stir salt, yeast and half of flour into oat mixture, beat with wooden spoon. Add more flour until too hard to stir and dough pulls away from the side of the bowl.
Turn out onto floured surface and knead, adding any remaining flour until smooth and elastic. Place in lightly oiled bowl, turn to coat dough in oil, cover with plastic wrap. Let rise until almost doubled, about 60 minutes.
Gently deflate dough and form into a loaf, place in greased 9x5x3 loaf pan. Cover loosely with plastic wrap and let rise until top of bread is 1-2 inches above top of loaf pan.
Bake at 350 for 55-60 minutes until browned and sounds hollow when tapped. Remove from pan and let cool on rack for 30 minutes before slicing.
Yield: 1 loaf
