Nutritious Oat Bran Muffins
Source: Bob's Red Mill - this recipe from Linda Rowe of Deming, Washington, was a winner in our baking contest
3/4 cup Whole Wheat Pastry Flour
3/4 cup Oat Bran Cereal
1/2 cup Brown Sugar
1 tsp Baking Powder
1 tsp Cinnamon
1/2 tsp Baking Soda
1/3 cup Bananas, 1 medium, mashed
1/2 cup Yogurt, plain (*I used buttermilk)
2 Egg Whites, or 1 Whole Egg
2 T Cooking Oil (*I use light olive oil)
1/2 tsp Vanilla
1/2 cup Carrot, shredded
1/2 cup Dates, chopped (*I lightly toss in flour)
1/2 cup Walnuts, chopped

Mix together dry ingredients.
Mix liquid ingredients in separate bowl. Combine the two mixtures and stir till moistened.
Fold in carrot, dates and walnuts. Lightly grease or line muffin tin with paper cups. fill 2/3 full.
Bake at 400 degrees for 18-20 minutes.
Makes 12 muffins.
