Low Sugar Banana Pumpkin Muffins - for the Grandbabies!

Dry ingredients:
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp kosher salt
opt: 1 tsp cinnamon
Wet Ingredients:
1/2 cup sweetener - honey, maple syrup or sugar
1/2 can pumpkin (7 1/2 oz)
1 large or 2 small bananas, mashed
2 eggs
1/4 milk, yogurt or sour cream
1/2 cup fat - light olive oil or melted butter
Add-ins: 1 cup chopped berries, diced apple or pear, shredded zucchini squeezed dry
Whisk together the dry and wet ingredients separately. Combine by folding together just until mixed.
Stir in add-ins.
Using a standard ice cream scoop, divide batter evenly among sprayed or lined muffin tins.
Bake in 375 oven for 15-20 minutes or until toothpick inserted in center comes out clean.
Makes 12-18 muffins depending on ingredients used.
