Hoagie (Small or Big), Sandwich (round or oval) or Kaiser Rolls (updated 9/25/23)

3 tsp instant yeast
2 cups warm water
2 T oil
2 tsp kosher salt
4 1/2 cups unbleached flour or bread flour

Dissolve yeast in water, let sit until foamy.
Add oil, salt, and half of flour, beat until combined, let sit until bubbly.
Knead in enough of remaining flour just until dough is no longer sticky, but is still slightly tacky. Knead until dough holds it's shape and is elastic, about 5 minutes.
Place in oiled bowl, cover with plastic wrap and let rise at room temp until doubled, about 1 hour.
Divide dough and form rolls, place on baking stone that has been sprinkled with cornmeal.
Cover loosely with plastic wrap and let rise for 30 to 40 minutes, or until almost doubled.
Bake at 400 for 15-20 minutes.
Makes 6 large, 8 medium or 10 small rolls.
