Healthy Muffins
with blueberries, banana and nuts
Mix and let stand
1 cup buttermilk
1 cup rolled oats
In a second bowl mix together:
1/2 cup unsweetened applesauce (or 1 apple, peeled, cooked, mashed)
2 T light olive oil
1 egg, lightly beaten
3 T brown sugar
3 T honey
1 tsp vanilla
Combine oat mixture and egg mixture.
Whisk together:
1/2 cup whole wheat flour
1/2 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Add to wet ingredients with wooden spoon. Don't overmix.
Optional additions:
1 mashed banana
fresh grated lemon or orange zest
1/2 cup raisins or dried cranberries
1/2 tsp cinnamon plus 1/4 tsp fresh grated nutmeg
1 cup blueberries
1/4 cup chopped walnuts or almonds
Bake in muffin tins @ 400F 15-20 mins.
