Hamburger or Hot Dog Rolls (updated 4/17/20)

2 tsp yeast
1 cup warm water (can use half milk)
3 T butter, melted
2 T sugar
1 egg, beaten
1 tsp salt
3 1/2 cups unbleached flour, divided, more or less as needed

By hand or in mixer: Combine yeast, water and 1/2 cup flour and let sit 10 minutes until foamy.
Add butter, sugar, egg, salt and 2 1/2 cups flour, beat until smooth and elastic, adding more flour as needed until tacky, but not sticky.
Form into a smooth ball and place in oiled bowl, turn over so that top is oiled as well.
Cover and let rise until doubled, 1-2 hours.
Punch down gently and divide into 8-10 equal pieces depending on desired size, let rest 5-10 minutes. Form into hamburger or hot dog buns, place on baking stone or parchment lined sheet, cover and let rise until nice and puffy.
Bake at 375 degrees for 15-20 minutes. Buns freeze well.

Optional: for a shiny top, make an egg wash by combining 1 egg plus 1 T milk and brush on buns just before baking.
