Chocolate Babka Loaf
Brioche dough:
1/3 cup milk, warmed
2 tsp dry yeast
2 T sugar
1 1/2 cups flour
2 eggs, lightly beaten, room temp
1/2 tsp salt
1/4 cup butter, softened
Chocolate Filling:
1/4 cup butter, melted
1/3 cup cocoa
1/2 cup 10X sugar
1/2 tsp cinnamon
pinch of salt
1/2 tsp water - more or less for desired consistency
--Mix above ingredients together until smooth--
Egg wash - beat 1 egg and 1 T water together
Dissolve yeast and sugar in milk in pan of bread machine or mixer, let sit until foamy.
Add remaining ingredients, use bread machine on dough cycle, or mix until smooth and elastic. Let rise until doubled, about 1 hour.
Punch down dough and spread into rectangle with fingers. Spread chocolate filling over dough and roll up from long side. Pinch seam together. Twist roll and shape to fit into 9x5 buttered loaf pan.
Cover loosely with plastic wrap and let rise until doubled, about 45-60 minutes. Brush top with egg wash and bake at 350 for 30-40 minutes, until golden brown. Let cool for 5 minutes before removing from pan.
Notes:
recipe can be tripled and made in tube pan
chocolate filling can be omitted and dough used for plain brioche loaf.
