Banana Buttermilk Soaked Muffins
Source: adapted from clean eats fast feets

1 cup buttermilk
1 cup rolled oats
1 cup mashed banana
1 tsp vanilla
1 egg
1/4 cup packed brown sugar or maple syrup
1/4 cup plain yogurt
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
opt: 1 tsp cinnamon
opt: 1/2 cup blueberries
opt: 1/2 cup raisins
opt: 1/2 cup chopped nuts

Combine buttermilk, oats, banana and vanilla. Cover and let sit for at least an hour or up to 10 hours overnight.
When ready to bake, preheat oven to 400 and grease a 12 cup muffin pan.
Add egg, brown sugar and yogurt to oat mixture. Stir in dry ingredients.
Mix in optional ingredients as desired.
Divide batter evenly between muffin cups
Bake at 400 for 18-20 minutes until starting to brown on top. Cool 5 minutes in pan, remove to rack to finish cooling.
Store cooled muffins in airtight container in the fridge. Reheat in microwave 15 seconds
