Banana Bread - One Bowl, dairy free

1/2 cup sugar
1/2 cup brown sugar
1/2 cup neutral or mild tasting olive oil
2 eggs, beaten
2 tsp vanilla
1 tsp baking soda
2 tsp cinnamon
1 heaping tsp kosher salt
1 1/2 cups flour
4 medium or 3 large very ripe bananas, mashed

Stir together sugars and oil, mix with wooden spoon until combined. Stir in eggs and vanilla.
Stir in baking soda, cinnamon and salt, mix until combined.
Stir in flour until smooth, mix in mashed bananas.
Pour into greased 4 1/2 x 8 1/2 loaf pan.
Bake at 350 for 55-60 minutes or until toothpick inserted into center comes out clean.
