Banana Bread

1/2 cup (1 stick) butter, softened
1 cup sugar
2 eggs
1 tsp vanilla
2-3 bananas mash enough to make 1 cup
1/4 cup milk, yogurt or sour cream
opt: 1 tsp cinnamon
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt

Opt: handful of one or combo of chopped nuts, raisins or dried fruit, chocolate or white chips

Cream butter and sugar, beat in eggs, vanilla, bananas and milk.
Whisk dry ingredients together, add to creamed mixture, stir until moistened.
Stir in optional ingredients.
Pour into greased loaf pan.
Bake 350 for 60-75 minutes or until a toothpick comes out clean. Cool 15 minutes before removing from pan.

Variations:
for lowfat, can substitute unsweetened applesauce for butter - all or half
can substitute coconut oil for the butter
can use half white and half brown sugar
can sub oat or whole wheat flour for half of regular flour
can bake in 8x8 baking pan
