100% Whole Wheat Oat Bread

1 cup warm water
1/2 cup old-fashioned rolled oats
2 tsp yeast
1/4 cup buttermilk, warmed
1 egg - beat into milk
2 T light olive oil
2 T honey
1 tsp salt
1/4 cup vital wheat gluten
2 1/2 cups whole wheat flour, more or less as needed

Combine water & oats, let stand 5 minutes
Add yeast, milk, egg, butter, honey, salt, wheat gluten, and 1 cup whole wheat flour. Beat until a smooth batter forms, then let stand 15 minutes.
Stir and then knead in enough additional flour until dough is smooth and springy.
Cover, and let rise until doubled, about an hour.
Punch down, knead briefly and let rise again until almost doubled.
Punch down, gently form into loaf and place into greased loaf pan. Let rise until 2 inches above pan.
Bake at 375 for 25 to 30 minutes, spraying oven with water during first few minutes.
