Stuffed Peppers (updated 5/3/24)
4 peppers, green and red
1 onion, chopped
1 clove garlic, minced
1 lb ground beef (can use part hot sausage)
1 tsp salt
1/4 tsp pepper
2 cups tomato or marinara sauce, divided
1 cup cooked rice (can use cooked barley or quinoa)
Grated cheese (mozzarella, cheddar or combo)
Saute onion in oil until soft, add garlic for 30 seconds. Add ground beef, salt, pepper and 1 cup of the tomato sauce. Cook, stirring often to break up beef, cook just until done. Stir in rice.
Divide filling between peppers and place in sprayed baking dish. Pour remaining tomato sauce over peppers, cover with foil.
Bake at 400 for 30 minutes.
Remove foil, top each pepper with cheese and bake for an additional 15 minutes.
