Stuffed Peppers

4 green peppers
1 onion, chopped
1 clove garlic, minced
1 lb ground beef (can use ground turkey)
1 tsp salt
1/4 tsp pepper
2 cups tomato or marinara sauce, divided
1 cup cooked rice (can use cooked barley or quinoa)
Grated cheese (mozzarella, cheddar or combo)

Optional: Soften peppers by cooking covered in microwave for 2 minutes.

Saute onion in oil until soft, add garlic for 30 seconds. Add ground beef, salt, pepper and 1 cup of the tomato sauce. Cook, stirring often to break up beef, cook just until done. Stir in rice.
Divide filling between peppers and place in sprayed baking dish. Pour remaining tomato sauce over peppers.
Top each pepper with cheese and bake in a 350 oven for about 60 minutes. If peppers are par cooked ahead of time, bake for 30 minutes.
