Skirt Steaks
Source: cut of beef recommended by Carol, method from yahoo answers
1 1/2 pound skirt steak
1 clove garlic, cut in half
kosher salt
fresh ground black pepper
worcestershire sauce
Oil for sauteing
Rub steak with cut side of garlic. Sprinkle with salt, pepper and worcestershire. Repeat on other side.
Let marinate for a few hours in the refrigerator, or at room temp for an hour.
Cut steak into serving size pieces (about 1/2 pound each)
Add oil to frying pan, turn to medium-high heat. When hot, add steak and sear 1-3 minutes on each side, depending on desired doneness. We like rare or med rare, which takes 1 - 1 1/2 minutes on each side.
