Meatloaf (updated 3/10/24)
Source: combination of recipes

2 tsp olive oil
1 medium onion, finely chopped
2 small garlic cloves, minced
2 large eggs
2 tsp salt
1/2 tsp freshly ground black pepper
1 tsp Dijon mustard
1 T Worcestershire sauce
1 T ketchup
1 tsp dried oregano
1/2 cup milk or water
2 pounds ground meat - comination of beef, pork and/or veal
2/3 cup oatmeal

Saute onion and garlic in oil until softened, about 5 minutes, set aside to cool.
Mix eggs with salt, pepper, mustard, Worcestershire, ketchup, oregano and milk or water.
Add egg mixture to meat in a large bowl, along with oatmeal and cooked onions/garlic, mix lightly with hands until evenly blended.
Form into loaf in baking dish (not loaf pan)
Bake at 350 for 1 hour. Let sit 10 minutes before slicing and serving.
Makes 10 servings
